The 2017 documentary "Barbecue" is good for food history buffs. It shows how slow-cooked meat is a global delicacy all over, taking on local traditions, styles and cultures. You get to see that "barbecue" can be very different in other parts of the world compared to what Americans think it is, and yet really the same concept.

In these days of electric smokers, wifi thermometers, wood pellets, and prepackage rubs and sauces, making a solid barbeque has never been easier. Will it be award winning, pitmaster BBQ? no, but it will be as good/better than most chain restaurant BBQ.

The biggest question is what regional style do you want to make?

The original location now goes by the name Smitty's (family argument)

There is an inch of smoke foam on the brick walls from 100 years of meat smoking.
It is the best.
