I intend to unlock the iPhone whether or not I go with an AT&T compatible carrier.

As for MMS, I have the instructions for reactivating it after switching to a new carrier. This is a jailbroken phone and while I have to remove the jailbreak to apply a carrier-unlock, I expect that I'll be able to re-do the jailbreak and do whatever's necessary to get MMS back with minimal hassle.

Plans that I'm looking at:
Straight Talk: Unlimited talk and data for $45/month + a $15 micro-SIM.
H2O: $20/400 minute plan with $.30/MB data. I suspect this will end up saving quite a bit of money given my mom's previous cell phone use.

So no hidden costs to worry about? A $20/month pre-paid plan costs $20/month? What kinds of taxes and fees get applied?

No hidden fees or taxes, at least with H2O, that is one of the big pluses. Also, you can usually save another 3-5% by buying refill PINs from a place like CallingMart that usually has discount codes. I always use CM for all my PINs for H2O and Page Plus. I am not sure if there are any taxes with ST.
