When making a sandwich I love the mayo but as a substitute I use mustard and horse radish. Some horse radish is super high in fat while others are very low. Check the label.

I use homemade pesto a lot of the time. I know what's in it, and it tastes great with the same things that mayo works with, IMHO.

How about light or fat-free ranch salad dressing. I've used that in a pinch when the wife hasn't made it to the grocery store, and I gotta make a sandwich.
