You're correct. I have a 42-year-old boat with a saltwater-cooled engine, and a stainless steel standpipe coolant mixer and muffler that I'm pretty sure is original.

Best cheap chef's knife, bar none, is the eight-inch Forschner-Victorinox. Available for about $30 at Bed Bath and Beyond. Fabulous knife.

But if you are not buying cheap, get the Shun or Global.

We have several knives from this company and I think they're great but I know how to sharpen a knife.
You can't hardly beat the price.

I use the Cook's Knife (blade 6 1/4", overall 10 7/8" R134 and the Ham Slicer (blade 9 1/2", overall 13 7/8" R111,
the most of any of those we have. My wife uses the Regular Paring (blade 3 1/4", overall 6 3/4" R101 the most, I think she has at least 2.

The length of time that a knife stays sharp depends upon the alloy used in the knife. Sometimes a knife that stays sharp for a long time is a disadvantage since it's far more difficult to sharpen due to it's hardness.

I was actually referring to the cost difference between a stamped or a forged knife.

Nope. Not joking. stainless steel is stainless steel and carbon steel is not stainless steel.
