Dropbox does offer an "undelete" option through the web interface that allows you to go back 30 days in the free version (I believe that's the correct time period) to restore a deleted file.

If you tell it to stop syncing, it shouldn't delete the files - it should just stop syncing. And just because the files are removed from their server, doesn't mean I want the local ones removed.
