IS IT STILL GOOD? Frozen food edition! CALLING PAUL F - mattkime - 08-08-2018

I am the proud owner of a chest freezer and subscriber to a meat CSA. This means I have a good supply of grass fed beef, chicken, and pork in the chest freezer.

I've been mindful of maintaining a first-in-first-out eating system and a few months in I realize I need to pay a bit more attention to it.

How long will cuts of beef keep in my chest freezer? Ground beef?

Beef will keep for years. It may dry out but it will moisten as it thaws and while you grill it.

I'd be most concerned about ground meat. Using it sooner is better than later. Are the other items properly wrapped for freezer storage? Vacuum sealed is probably the best method. If properly sealed, meat should be good for a long time (1 year plus).

Are you familiar with Sous Vide cooking? Vacuum packed food cooks up beautifully using Sous Vide.

A vacuum sealer is a must. If not, freezer burn doesn't take long, it gives meat, fish or poultry a terrible flavor. It's safe to eat, but you won't want to.

Some of the food is vacuum sealed, some isn't. (getting food from two different farms) I haven't noticed any freezer burn yet perhaps helped by the chest freezer.

I've been doing a lot of sous vide. Usually you want to add some salt or herbs. That said, I would like to get a vacuum sealer. Just waiting for a good deal.
