Nut oils go rancid quickly but as long as your kitchen isn't unusually warm, you can keep natural peanut butter on the shelf for a couple of weeks with no problem. I keep half a jar out, and the rest in the fridge. I store nuts in the freezer, nut oil does not freeze and the colder temp extends the freshness. We've been using un-fridged nat PB for 10+ years. Slightly warmer climate that you (Mid-atlantic). Never had an issue. Various brands, crunchy, creamy. All the same. At the moment, we finish a jar in about 2 weeks, but sometimes that stretches out a week or two. Absolutely no issue or noticeable loss of quality.
