bought up all the lasagna noodles?
been to 3 stores at least 2x each over the last couple weeks, including the Italian market.
No damn lasagna noodles? Not even pre-cooked Ronzoni yech.!
I got cans of Red Pack, Galbani ricotta, sausages and eggplant and a nasty hankering for lasagna.
Who bought 'em all up?!
Dammit!

Eggplant and sausage in one lasagna? I dunno...


3 egg yolks
3 whole eggs
Salt
Enough flour

Knead
Let rest
Wrap in plastic
Fridge

Next day
Remove
Warm on table
Divide
Roll out
Dust with flour (or semolina)
Let dry for 30m

Cut, boil, lasagna making

I think that's the point tho - it's a LOT more work to make the noodles by hand than spending a couple bucks for a box at the grocery store.

My wife made a lasagna out of large beef ravioli. It turned out quite well. It’s not a 100% convincing lasagna, but it has a strong lasagna aura about it.

my spouse makes noodles from scratch .... or used to ...

they are the bomb. but as we age, we get lazy and complacent.

so .... who bought all the friggin' lasagna noodles?!!!

There's a certain genius to that! I may try that... layer 'em with mozzarella and sauce. That could be darn good!
