any favorite beef shank recipes? - mattkime - 12-18-2022 I have a number of packages labeled 'beef soup bones' which I expected to make stock with until I saw there was a lot more meat than bone. A better description might be 'cross cut beef shank'. Now I'm figuring out how I might cook them. Tomorrow I'll do an instant pot recipe but I'd like to have something different lined up for the next attempt. Buying a quarter cow results in a lot of chuck roasts. I'm the only one in my family that will eat a pot roast. I discovered that I can marinate them overnight and grill them for an hour and my family will partake. For my wife its mostly a texture thing, although she also shies away from anything savory and gelatinous. (sweet and gelatinous is something else entirely) Anyway - whats your favorite way to cook cross cut beef shank? Re: any favorite beef shank recipes? - mrbigstuff - 12-18-2022 Osso buco. Braised. Re: any favorite beef shank recipes? - Rolando - 12-18-2022 Salt & Pepper then more pepper. Leave in refrigerator overnight, open. Smoke on offset grille for 3-4 hours. Wrap in foil, let it braise in own juices for another 2-4 hours. Enjoy. NewtonMP2100 wrote:If I would do that, I think I would braise, then sear. Re: any favorite beef shank recipes? - NewtonMP2100 - 12-18-2022 ....sear, then braise...... ....try not to get shanked in the showers..... Re: any favorite beef shank recipes? - Paul F. - 12-19-2022 Do this, only with the shanks... I've done it, it comes out very very nice. I use a little less pepper than the recipe calls for. https://www.youtube.com/watch?v=7qmt9rup6_I |
