Easy diabetic pumpkin dessert - samintx - 11-26-2008 I am eating with a nursing home resident who is diabetic. I winged this dessert but there probably is a recipe somewhere.... 1 can Pumpkin (15 oz NOT the pie filling kind) 1 carton sugar free Frozen Dream whip thawed 1 pkg sugar free instant vanilla pudding Pumpkin pie spice to suit taste. (2-3 tsp) 1 Cup skim milk Make Pudding with 1 cup skim milk. Stir in Pumpkin, spice. Then stir in Dream whip. Put in dishes and refrigerate.
