Lunch: carrot, lime, cilantro salad with chilli paste..
#1
A buddy of mine put me onto this recipe after he accidentally bought a SECOND 5lb bag of carrots, and was trying to use them up at an accelerated rate...

Juice of one lime.
Zest of one lime.
1 tsp of chilli garlic sauce (or korean chilli bean paste...)
1 tsp-ish fish sauce
4-5 shredded carrots
3-4 shredded jalepenos
A couple tablespoons of chopped fresh cilantro (coriander) leaves.
Salt and pepper to taste.

Had this for a late lunch 30 minutes ago and I'm still sweating... Spicey goodness! :-D

I would say that at minimum, that combo is "flavorful."

It's surprisingly good...
And the fish sauce does not add any "fishiness" at all, despite what it may smell like in the bottle.

Needs some tamarind paste or some other sweetener, methinks.

That would be a good addition!

Sounds good.
I've only done lime or lemon and tajin. Nice bitter/spicy flavor.
