If iTunes picks the wrong CD from the CDDB database then you can use the Get CD Track Names command to fetch the names from another disc... assuming that there's another disc with similar track-lengths that has been registered with Gracenote.
If you've burnt a custom audio CD, that database is useless for the task and it's up to you to populate the "info" fields for your disc.
