My son just showed me Notational Velocity for the Mac and its ability to sync with SimpleNote on iOS. Seems really easy to use.

You must have set up offline notebooks somehow because according to Evernote: "For full access to entire notes and notebooks from a mobile device (iPhone, iPad, and iPod Touch; Android devices; BlackBerry 10 devices, and Windows devices), you'll need a paid Evernote subscription to set up offline notebooks."
