Well, I think I did the next best thing. I disconnected the converter box and plugged the FiOS cable directly into the back of the TV, then let the TV scan for channels. It found more than 60; 30 or so that I could see watching at some point, the main network ones coming in in HD. No cut off sides on any of them.
Interestingly, my only options for format on the original TV remote are for Automatic and Wide Screen, both of which look identical. The other options listed by aspect ratio are all greyed out. The HD picture looks a little bit squished side-to-side (long and skinny-ish faces, but not bad). Of course I had to create my own channel guide so I know what's what. And unfortunately, a few of the cable stations we would normally want to watch are not available this way. On the other hand, we have several stations that aren't even available with the FiOS box.
We'll live with this for a while and see if we can get used to the change.
