If you've never done it, spending a day driving the back roads around Lexington and then between Lexington and Louisville is really great. The horse farms are magnificent. And you can enjoy several distilleries and drink more bourbon than seems reasonable on that trip!
In Lexington, go to Keeneland early in the morning and drive around the back, park and then walk through the stables where the horses are being groomed and prepared for the day. You can walk right up to the track and lean against the rail and watch the horses being exercised. The last time we were there they were doing starting gate training. You can also get a tour but walking through the back is a pretty great experience.

Also, go to Churchill Downs in Louisville a couple of weeks after the Derby when the crowds are gone. You can get general admission tickets for $11.50 for the Twighlight Thursday races. But, they don't even sell reserved tickets for those races and so you can go sit at the finish line at the rail and watch a half dozen races and make some bets. We bought tickets right there rather than paying the Ticketmaster premium. The museum at Churchill Downs is worth going to. The last time we were there beer was something like $2 a bottle on the Thursday evening. And I'm pretty sure we didn't have to pay for parking. A pretty great evening for $30 for the two of us!

And if you're going to be in Louisville, you ought to go to the Louisville Slugger Museum and Factory and watch bats being made and see some very famous bats from some very famous players

Once you figure out your desired blend, they'll make it up right there and sell you bottles. There's a $50 combo ticket that combines the museum and the bourbon blending experience. I'd suggest the museum first because you have a number of small drinks to figure out your desired bourbon blend and that might impact your ability to remember the museum if done second!
