I would just start out with Leopard.
I haven't found anything Earth shattering, but Time Machine is nice if you have a big external drive. Spaces is handy for apps that create a thousand windows and seeing the desktop. I fixed my background photo to black out the top xx pixels - to give me a nice grey menu bar with no photo bleed.
Leopard does break a few things - so if you have some software you need ask if it still works.
Or just run Tiger for 6 months and go to Leopard then.
PS My 1.8GHz C2D is a lot snappier since I did a memory upgrade. Scored 2 2GB RAM for $79 shipped last week (mini can only use 3GB of 4, but is slightly faster with matched 2GB chips).
