Ken Onion by Shun 7-Inch Santoku

Wanted a Santoku knife to replace my 30 yr old Wustoff Classic chefs knife. Tried several out and the feel of this knife was unbelievable. Truly an extension of the hand.

Same deal as my other post below... My wife knew I wanted a Sandoku, but she also knew that feel was very important, so she decided to simply let me pick it out.

I'm also getting the Ken Onion 3" paring knife as well

I have been wanting to get a Santoku. Does this one release items well even though it looks like it does not have the vertical grooves?

Well, I'll find out. I figure it can't be much different than my Wustoff in that regard. I'm really looking forward to the different shape and the better handling.

the "grooves" are known as granton cut.

Heh. That's like the Wusthoff chef's knife that I have...

I did try our the Wusthoff Santoku, and it has a bad angle at the bolster that pinched against my middle finger. I was pretty amazed that it felt so crappy, because it's not like the chef's knife does that. It fits fine like a traditional design should.

As for cost, if the Shun lasts for 30 years like the Wusthoff, it will be a small investment.

We got the Wusthoff as a wedding gift. I would have never thought that a knife would be such a cool gift. I'd never had a real quality tool like that before. I was blown away by how much of a difference it made. Since then, we gave chef knives as wedding gifts probably 3 or 4 times...

When I picked up the Ken Onion Shun, I was sold on it. These are a radical design made with the idea of fitting the hand when it is properly place on the knife. It feels awesome. I really can't wait to use it.

I like pretty much all the Ken Onion designs, congrats on your aquistions.

Still trying to convince the GF that dull knives are dangerous, sigh.

BTW... even though this thread is old... I got to thinking about F. Muffman's comments about the hollow-ground sides. I thought when I tried out this knife at Williams-Sonoma that it was hollow-ground. Turns out I was right. And they are the ONLY folks I can find that have the hollow-ground version. So I cancelled that part of my original order and bought the hollow-ground version from W-S. Net added cost was $30 for the knife and tax.



I would have been bummed had I bought the original knife and then found the hollow-gound version. Glad I posted to Macresource! Thanks, FHM!
