Add a little sugar to collards for people who are squeamish.

Collards are good, but I'm partial to Mustard Greens. I also really like Swiss Chard, just can't find it around here.

But I'll take any of the leafy greens without complaint.

I had a mustard greens thread not long ago. They’re too hot for me although I’m going to try just a small amount in some collards.

Really I'll eat any greens... cooked or uncooked. I'd disagree that kale isn't especially nutritious. The nutritional profile is pretty good, especially raw: https://en.wikipedia.org/wiki/Kale#Nutritional_value

... my personal faves: spinach, broccoli, brussel sprouts, asparagus. All of these I will eat steamed, with just a bit of drizzled olive oil, a touch of lemon juice, and a sprinkle of black pepper, and maybe a few slivered, toasted almonds.

I'll eat pretty much everything listed above as long as it is prepared properly. This goes especially for kale, brussel sprouts, chard, etc which can taste absolutely awful if not cooked well.

I like the cow to process my greens first.

Unless you are very particular about getting grass-fed beef, cows in the US don't eat greens any more. They are forced to eat corn and antibiotics.
