NEVERMIND, I misread your post. What I have below is for NOTES, not the To Do stuff.

I think you need iOS4. Take a look at this, or search online for something like "sync notes iPhone google"

You need an IMAP Gmail account with the Calendar activated. Setup Mail on your Mac to handle the associated email address even if you don't intend to use that address.
On your Mac setup iCal to look at that Google calendar. iCal is now synced to the Google Calendar, which means the iPhone or Touch can get to those events as well. Sync your iDevice over iTunes to let it know about the iCal stuff's existence.
So anyway, Google Calendars have notes, too. It's these notes that Mail picks up and that sync to iPhones and presumably Touches when the device is on WiFi (the same WiFi network, I suppose?)
Bottom line, if I enter a new note on my iPhone, or in Mail on my Mac (for that notes account) or via the Web all 3 will eventually get updated.
