Typically you can do a fresh install of the OS - from the disks.
As part of the install it can migrate your data from another disk (I think it is called another Mac). It will look for the drive, so have it mounted and ready to go.
An install of the latest changes would be a good idea.
I just switched to 10.6, and there were a few things that needed updating - though not much in my case. If you just want to get going, stay with 10.5.8. If you want to build for the future jump to 10.6.4 now.
