In the last few months I have ripped and processed almost 400 DVDs with RipIt and Handbrake using the Apple TV 2 settings in Handbrake. I show the resulting movies on our 60 inch Sony HDTV via an Apple TV2 and have very good picture quality. Ripit will also convert the ripped Video-TS files to Apple TV 2 or other formats, but I use Handbrake as it provides queuing.
I have written a step by step procedure for doing this with screen dumps. PM me if you would like for me to email you a copy.
