I use TextWrangler and straight-up LaTex from the command line. However, I found a GREAT makefile:

If you have make installed, you get good error/warning messages, and it handles the input very well.
I have also used Lyx extensively, and it's really good if you want a more WYSIWYG environment (and it is great if you want to graphically create your tables instead of dealing with all of those ampersands, etc.
