My neighbor Dave's wife was driving home when the car ahead of her hit a deer. She called Dave, who drove over, asked the fellow whose yard the deer was in if he wanted it; he said no, so Dave called the police and asked if he could take it. The police said, "Sure; we'll tell the animal people they won't have to pick it up. But you better call the Environmental Police so you won't get bagged for hunting out of season."
I came home to find the deer gutted and hanging from a tree in Dave's yard (he's a hunter), and a guy in uniform looking at it. Turns out he was from the EP; he put a tag on the deer. Dave came home and told me the story; he then took the deer up to a friend's in NH for butchering and packaging.
It's a good use for roadkill. The only trick is to get it fresh. But I can see not bringing it into your restaurant; the meat hasn't been inspected; and the hide is probably full of fleas.
