I suspect that much of my scans will never require printing, but would like them to look nice on HD TV during slide shows streamed thru AppleTV.

Generally I choose 400DPI for my print scans as color print paper maxes out at ~200DPI. This will get you a 1600x2400 (4MP) image from a 4x6 and will look good on any 1080p TV. Looking to the future, you could choose a 4K TV target size by scanning at a bit over 600 DPI but you will be getting no more resolution from your print original. However what I've read is scaling up during the scan process is usually preferable to scaling up using software later on.
