You might be able to use the DosDude tool or Carbon Copy Cloner to deal with the low-level stuff of making bootable Catalina volumes on a RAID, but...
1. You shouldn't be booting from a striped RAID. It's very VERY risky.
2. It's an unsupported configuration that can be hosed by a system update or crash.
3. You have better options. Like NOT using a striped RAID for your boot vol and instead using a SSD.
