What I would have done, after the phone was up and running, was casually start a video, and ask the guy "Ok, why did you need my Apple ID and password?", then report it, with video.
Good that you trusted your spidey-sense!
There's no telling how many times this has happened with these guy, and who may have payed a steep price for trusting them.
And change your Sprint password.
They should have just installed the SIM for you and let you take care of the Sprint password stuff.
