There is no reason they would need an Apple ID. Switching a SIM involves removing the old one and inserting the new one. SOMETIMES you need to reboot the phone for it to work right. Anything else is on THEIR end.
I would never give any technician my password. I know when I had my battery replaced at Microcenter they asked me to disable the passcode on the phone but they never asked me for it or anything else, and that is far more involved that swapping a SIM.
