The ONT will have a fiber cable running to it from the pole, and then you can get coax or Ethernet out from there. Usually they do coax on the initial install.
I understand you might need a newer router to get more bandwidth, but there is no reason you cannot do that yourself. What they are probably talking about is the newer faster router would need to be connected via Ethernet instead of coax. This configuration change can be done by a Verizon tech support person over the phone.

Same. And in my case all I had to do was connect my older Verizon router to the ONT via Ethernet, and have tech support provision that jack on the ONT.
