Flourless cakes are very dense because they are gluten-free. The best flourless cake is no better than a Duncan Hines cake mix cake made badly, and the worst have the general texture of carpet felt. They are no more healthy for you than a regular cake with flour UNLESS you have a gluten allergy or celiac disease, at which point flourless is the way to go.
