If you plug the SSD directly into the M2 mini, it would be much faster, since USB-C is 5-10 or even 20-40 Gbps. That is the theoretical speed of the bus, the actual SSD will probably be much slower.
If you attach to the server, you are most likely limited to 1 Gbps assuming you have 1 Gbps ethernet, or if you have WiFi, you could have a slightly different speed. In either case, it will be slower than attaching the drivers directly to the M2.
My advice: sell the 2014 mini and use that cash for something to make your M2 better. Simplify, don't overcomplicate your life.
