I was doing some similar experimentation just creating new folders on my transitioned user account.
And I saw those descriptions that it placed next to each, so I changed the names to match the descriptions, and it seems that it's possible to create the "Inbox", "Drafts" and "Trash Can" folders that I presume will function the same as they do for a new user.
But there doesn't seem to be a way to create the folders that function as "Unread" and "Sent Items".
That is an issue impacting lots of users and I would hope the admins would try to investigate the cause and possible solution.
