Paul, I like (and use) everything you listed except the corn, bacon and/or polenta. Never tried it with polenta but the corn sounds good.
I also add all the juice from any canned items I use plus one full bottle of Bass ale (or any dark beer you like). Because I tend to go on the hotter side (hense the ass-ripping part) a side of sour cream cools the fire.
One caveat though, in my book canned chili is *not* chili. It's Mighty Dog...
