You leave the jumpers on. The last rev of G5's also support 3Gb SATA.

Never say never
There are some RAM drives which are much faster than that. But results from 1.5Gb drives vs 3Gb drives show the 3Gb drives are faster (though if that's because of the interface, who knows.)
