I swear they're breeding turkeys with bigger, heavier bones.
I did a 24 pounder for Thanxgiving and there were no leftovers.
I cheat and put sea salt and wine in a spray bottle. :-)
No one here likes brined turkey, so I can honestly say I didn't soak it. :-)
I've also found if I put my big pizza pan (sort of an over-sized, over-wieghted cookie sheet) under the roasting pan (to catch any drippings, I dislike cleaning) , it takes almost an hour off the cooking time. I'll spray it a couple times while cooking.
I've tried extreme low temp. overnight roasting, but a bit too dry for my servees palates.
I prefer it, myself.
I use that huge flat pan under cheesecakes, too.
I have four (of 21)butternut squash left from my garden last Summer.
