BTW... even though this thread is old... I got to thinking about F. Muffman's comments about the hollow-ground sides. I thought when I tried out this knife at Williams-Sonoma that it was hollow-ground. Turns out I was right. And they are the ONLY folks I can find that have the hollow-ground version. So I cancelled that part of my original order and bought the hollow-ground version from W-S. Net added cost was $30 for the knife and tax.
I would have been bummed had I bought the original knife and then found the hollow-gound version. Glad I posted to Macresource! Thanks, FHM!
