Here's what I did and it worked like a charm.
Use Disk Utility to create a disk image of the Windows partition.
Use Boot Camp to erase and create a new, larger partition.
Use the Windows install disk to format the new partition but not install Windows.
Use Disk Utility to restore the disk image to the new larger Windows partition.
FWIW, I used the FAT32 formatting so I can copy files to the Windows partition.
