This is the absolute best value out there. This is an awesome set of knives. I have a set over 5 years old and they are still awesome! I only wish they had the Cleaver bonus when I purchased.

4 passes on the sharpening steel after a couple of uses will keep these knives very sharp!

I've worked with a lot if different metals over the years one of them being a certain 400 series Stainless, it has Carbon and is magnetic.

I've often thought that stainless exhaust systems would pay for themselves in not having to be replaced for the life of the vehicle (if the system was well made).

I've listened to a lot of heavy metal over the years and one thing I know is that carbon steel != stainless steel!

Lux,

If you're joking, cool. If not, you're incorrect. It's difficult to tell from your post. Carbon steel does _not_ equate stainless steel. They differ significantly in the amount of chromium, which affects the steel's ability to resist rust and corrosion.

There are specific "high-carbon" stainless steels available for use in making knives. They take a sharper edge than most standard stainless steels and are more easily sharpened. Their one downside is a tendency to stain a bit more easily.

As for the set in the OP, their claim of carbon stainless steel is about worthless without citing the specific type used.

They have yet to stain... therefore they are made of stainless carbon steel (currently).
