To get better replies it might be good to define who "we" is. And ages(?).
Have you or they been to NYC before? If not, defintely do the touristy stuff like Statue of Liberty, double decker bus tour, Top of the Rock. Pic of everyone rubbing the balls of the Wall Street charging bull sculpture. HAHa! Stuff like that. Walking up to the Statue of Liberty is a one of a kind experience. If you have any interest, do it now while you are still physically able to climb the interior steps. Reservations for the crown are all sold out though. There are still tickets available for the Statue of Liberty pedestal if that interests you. Less stairs than the crown. Mets game? Mets/Brewers tickets should be cheap enough that even if you're not a baseball fan, just stay for a few innings, check out the stadium, have a beer and leave early without feeling guilty. If you are coming from a land-locked state, just something simple like spending the day at a Long Island beach is nice. NOT Jones Beach. Go out a little further to Robert Moses State Park. 1/10th the amount of people.

In addition to the great suggestions you've gotten already, would you enjoy some outdoor theater? NYC has lots of venues in addition to Central Park. In keeping with Tips & Deals theme, these are usually free (although donations will be requested, of course!). At the Soldiers' and Sailors' Monument in Riverside Park, you sit on the steps while the actors perform in front of you, in the open, under the stars (unless there is a rainstorm!).
