I dried some apples a few weeks ago and I've been enjoying them tremendously. I was wondering if they have the same vitamin and fiber benefits as before they were dried though?

You sun dried them? I've been wanting to do the same but not sure how to proceed. Also, are those food dehydrators any good?

My guess is that there is no difference in the fiber, but it's an open question when it comes to the vitamins.

without pretreating or blanching you probably lost quite a few vitamins in the drying process, plus concentrated the sugars and calories.
Still more palatable than a rotten apple in January. That said, from experience, DO NOT eat a whole box of dried apricots all at once .

I always wondered about the ill-effect of Sulfur Dioxide used in store-bought dried fruits. (Common ingredient of acid rain? Did we get that BEAT?)

I used a fruit dehydrator that I bought maybe 10 years ago. Haven't used it in a very long time. The apple chips are delicious! Took about 12 hours with fairly thin slices.

I love my dehydrator, and use it all the time. Just did a batch of apples (plain) and with cinnamon/sugar on them. Also do bananas, strawberries, and jerky.

which brand of food dehydrator would you recommend?

I put about 5 sliced apples on the grid in my oven, warm it up to about 100, turn the oven off and leave the light on.
It takes over 24 hours, depending on how think your slices are, but it works. Only problem is i usually eat one batch before the 2nd is done.

Can the same process be applied to a toaster oven then?
