Soaking some Rancho Gordo Heirloom Pinquito Beans
#1
Carmalizing some onions in my new all-clad copper core saute pan (gift).

Going to brown some Andouille Sausage and tri-color peppers, garlic.

Trying to get my mind off bad weather and doing some laundry.

You need some good rice to go with that!

Good luck.

There will be some good rice , Winston.

I wish one could find real pork sausage around here.

One of the things I miss the most about Louisiana is the fresh, quality meats, in almost every family owned store around Lafayette. The best is from Strohe's Meat Market, Welsh, Louisiana. It is the best for any application, and it makes this rich dark gravy when smothered.

I feel your pain. This isn't Strohe's, but it might do:
Andouille online

I have been trying to find the market my wife's former employer (a dentist) would use when he brought us Christmas ham and andouille from around Lutcher, La. You can't find good boudin and andouille outside La.
