Maybe it's because I don't shop there often enough to have noticed it before.
Last week I bought the Pioneer speakers mentioned here (still on sale for another 3 days.)
- Successfully applied coupon codes and checked out.
- Got order confirmation(s).
- Got shipment notifications and confirmations of card having been charged, listing the price of the speakers as if it were an invoice copy: no discount showing.

Logged into their site and sure enough, the coupons had been applied to the purchases. Logged into my bank, sure enough I was charged the discounted prices.
Am I being too picky, or shouldn't they update their notification system to reflect what was actually charged?

Yes. They should update the notifications and confirmations to show exactly what was charged.

The coupon codes were applied as a discount to the invoice, not as a discount to the product, when you checked out.
The shipping notifications or shipping invoices always show the line item charges of what was shipped. All shipping invoices work that way. Since the product you ordered wasn't discounted, the line item for the speakers shows the full price.
If they did it any other way, they would be doing it wrong.

I don't think it's too much to ask, or that there's anything wrong with doing so.
I just received a pair of speakers I ordered with a coupon discount. While the shipping notifications has no price info, the confirmation email did, and it was the discounted price I expected to see and was charged to my card.
Not a big deal, but still...
I don't order from Newegg much, but when I do, I'll pay more attention and see if it happens to me. Maybe it was just some anomaly.

Okay, so ... I just got invoice receipt copies. The earlier things were "just" shipping notices apparently, even though they had items and prices showing. The invoice receipt copies do show the discount applied.
