also, if you are in Texas, Cancun must be about a 2 hour flight, correct? I'd be there all the time.
you could visit Tulum and Merida from there and make it a nice multi-location vacation.

you're in Texas and you're looking for warm weather resorts? man! (Ok, I realize you could be in the high country.)
Especially with a nice big pool in the back yard.
It's time for snow ski /boarding resorts and lessons.
I've done Christmas at Disney with kids.
Wasn't my idea of fun but the kids had a great time. Got lucky with great weather.
Why take the kids ?
Hire a baby sitter and take off for a week :-)

So we're looking for warm weather like shorts, beach, swimming, etc. New York will probably not be ideal!
Just some basic water activities that up to a 10 year old can handle I guess.

But if you're aiming to please the 10-year-old crowd it's tough to beat Orlando.
Ft. Meyers/Sanibel is also beautiful.
Wait! How about San Antonio, TX? Sea World.

I'm not sure why this hasn't been mentioned, but...
Send the kids to Disneyland with grandma, rent an air conditioned room and add...

Another thought for the Carib, we did this one year when Disney had their Big Red Boat :

kids were in first and second grade and loved it
a few leave from Galveston which would be convenient especially not adding airfare with all the other costs involved

WHen in December? If it's Xmas thru NYD, Orlando (Disney) can get mighty crowded. Any time before about the 21st or so, and you should be ok. Weather will probably be upper 70s or low 80s. Not what we consider warm, but not too bad. Can get a cold front though, so be prepared. Everyone thinks it's always warm here. But we can have days in the winter where it's only in the upper 40s or low 50s. A couple of years ago we had the "lowest high" on record when it only got to 39 as a high.
Someone mentioned Ft Walton Beach. I'd advise against it. It's a beautiful area, but in December it can be downright cold. My in-laws have a time share in Panama City for the first week of November, and we went last year. Lows in the upper 30s/low 40s and highs in the 60s. I can only imagine what it would be like in December.

:agree: with mikebw. The kids I've known loved cruising: there's plenty for them to do, and it makes for a very easy, relaxing vacation for the adults.
