Fantastic deal. I got one for $199 and love it. $159 is a steal. The phone itself is better than pretty much any $159 phone you are going to pick up in the store.

My wife might like this- is it more-or-less stock Android? (ie -has the same basic UI and runs Android apps?)

The UI looks like the Kindle Fire Tablets. Apps are Android apps from Amazon's app store, so best to check app availability first. You can sideload other Android apps, but those relying on specific Google services won't work. You can sideload the Gapps (Google Apps) required to run the Play Store, and it isn't hard, but that's not an out of the box experience.

No problem. I actually had Google Play Services, Play Store, and the like installed on my Fire Phone when it was still based on Jelly Bean and it worked pretty well. If memory serves, you can only add one Google account and you can't delete the account very easily (wiping the phone will obviously work, but I can't remember if erasing app data for the Goole Account tool deletes the account). Which is probably fine for most people, but I needed the phone to work for my partner who downloads apps from our group account, but syncs to her own specific Google account.
