I purposely chose the Paperwhite for the e-ink. It is really tiring for the eyes in general to be always staring at a back-lit screen.
True, that there's no color with e-ink, but I can say that reading is much more physically relaxing and is a good change up from the monitor.
I absolutely would not want to read a whole book on an iPad and would do everything to get it to my Kindle.

we have a kindle and an iPad and the kindle never gets used any more
me, I'd rather have a moldy, dusty sneezy paperback

An iPad Mini of some kind. No doubt about it. I've used Kindles. I've used iPads. I've used Android tablets. I switched to an iPad for reading a long time ago and haven't looked back. That's my primary use for my iPad. That it can do a ton of other tasks is a bonus.
Since your wife has an iPhone, I'd go with an iPad Mini 3 or 4. The others are too big for a device that will be primarily an ereader. Now is the time to buy because of Black Friday. Definitely a great opportunity.
Given the choice, get a model with built-in cellular. That way, she can take it with her and use Wifi. Or, if you're willing to cough up the bucks, cellular data. She'll have the option, which is key.
