I recently watched Springsteen's 1975 London show (amazing) and Sade's concert of the early 00s that was also very good. Also Elton's show from 2000 at MSG.
Recommend some concert videos to see.

Depends on your musical taste but I would just pick favorite artists/groups and search for DVD/Blurays.
Some that I have are: Fleetwood Mac The Dance Peter Gabriel Back to Front Rush (I have them all)
