When I create a new email message, or respond to an email message, the font defaults to size 12. I would prefer 14 but I don’t see a way to set this? Am I missing it?

Mail ... Preferences... Fonts & Colors
Message font:

This appears to set the default for Rich Text messages.

I have mine set to "Plain Text" (Preferences... Composing) so my outgoing messages do not have a font specified. The font display choice is then up to the receiver's preference.

I've played around with many fonts over the years, and weird how I've grown to love and always return to the readability of the plebeian Helvetica.

Helvetica is a proportional-spacing (kerned) font.
For a fixed-width font, I would suggest Consolas (or any fixed-width font that distinguishes {O, o, and 0}, and {|, l, i, !, ¡, and 1}, and {5, s, and S}, and {2, z, and Z}) (these 4 sets are the worst for me, YMMV)

The phorum's formatted code box uses a decent monofont:
{O, o, and 0}
{|, l, i, !, ¡, and 1}
{5, s, and S}
{2, z, and Z}

That may be a forum setting, or may be discernible via WhatTheFont or WhatFontIsThat
