Overall, it was, as the kids say, "mid"
Rosario Dawson was excellent, reprising her role from The Mandalorian.
A special appearance by was a nice surprise.
Not really a fan of the animated Star Wars, so the characters from Rebels were not familiar to me.
It started off really weak, basically a Lifetime channel version of Star Wars, but got progressively better,. The finale was "pretty good".
Overall, about as good as Kenobi or Boba, way below Mandalorian Season 1/2 or Andor.
If you're a fan of Star Wars, or Rosario Dawson, its worth a watch.

That's the problem with it.
They didn't make it clear in the promos that it was simply a live-action continuation of the animated series and written for fans of that series. They were playing to a very specific crowd.

Prior to watching Ahsoka, I'd read reviews that you didn't necessarily need to watch anything to understand it, which is sort of true, although there's certainly more context if you'd watched The Clone Wars and Rebels.
I decided to watch The Clone Wars first, and binged through that and a little bit of Rebels before starting Ahsoka, and finished up Rebels after Ahsoka. My wife had only seen bits and pieces of The Clone Wars prior and didn't seem overly confused, although I did explain a couple things.
Rebels is certainly more "important" to watch of the 2 though (plus a couple/few key episodes of The Clone Wars would be helpful). There's an "Ahsoka" important episodes playlist in Disney+ if you don't want to go watch tens of hours of backstory.
Tip for The Clone Wars. There's actually a "back door pilot" movie, The Clone Wars. It was theatrically released, but didn't do well. Even though it's in Disney+, it's not well promoted (i.e. it doesn't appear in the Star Wars "timeline" order view). It's MUCH better than the actual Clone Wars pilot (which we had watched years ago, but just didn't get into the series back then). I actually didn't even watch the movie until I was partway through the series, because I was confused about what it was.
After getting into The Clone Wars a bit, I enjoyed it, as well as The Bad Batch and Rebels. Just started Resistance, although this one seems more skewed to kids.

I never watched one episode of any animated Star Wars series. I'm a casual Star Wars fan. Had no idea who Ahsoka was. I didn't get lost and enjoyed it. It's a great series for casual fans IMO. If you like Rosario Dawson but have no interest in Star Wars, I'd probably steer clear.
Similar to Loki and Wandavision. You don't need to be hardcore fanboys to enjoy it. The writers did a good job in not alienating casual fans.

I enjoyed it. Andor is my favorite of all these, but they were all worth watching to me. I can't keep all the stories and timelines straight, so I think watching clone wars, etc. might just confuse me more.
I thought Rosario was sort of half and half. I think she's trying to have the aura of a guru, but it comes off oddly to me. No biggie though, good enough for the story.

I didn't know who any of the characters are, but that's ok, I just assumed it was a different story told.
I might not have tuned in at all, except — Rosario Dawson.
With with the weird hair/headgear and face paint, I still enjoyed her bearing, command presence, and 'fighting skills'.
Not much of a Star Wars fan, having seen only a few of the movies and TV shows, Ahsoka is still enjoyable for me.
My one complaint is the 'If I dood it, I get a whippin', I dood it' trope.
That's so overused, I don't know if I can every see it used and not groan 'He/she's gonna dood it' when it happens again.
