my kitchen time comes and goes. lately, I've been doing a fair amount of cooking and now that the winter months are upon us, I'll be making some more labor-intensive dishes. I'm looking for good recipes that make use of the dutch-oven method or just long simmering on the stovetop. sure, I can look up millions of recipes on the interwebs, but I'd rather hear from the denizens of MRF. bonus points for recipes that use fresh or dried mushrooms (I love mushrooms).

Sounds like a great opportunity to make Beef Burgundy, and add mushrooms in addition the carrots and onions.

Pork butt, simmered/ slow cooked till it falls apart. Remove the fat and fork shred the rest, add a big giant can of Hatch chiles, chopped, lots of garlic, cumin, onions and whatever other seasonings (I like heat).

Return to the pot to simmer and blend for another hour or so, and be prepared for the giant yum.

Ugh. No idea where my recipe is, but I have a good one for creamy polenta with a mushroom ragout/saucy thing.

I know there is heavy cream and/or cream cheese and parmesan in the polenta; red wine, thyme, garlic and shallots in the sauce for the mushrooms. I have only made it a couple times and found that the gourmet mix of mushrooms that you can get in the grocery store is fantastic with this.

I remember I made the polenta in a regular pot but made the mushroom sauce in the dutch oven. Started it on the stove and finished it in the oven.

I'll keep looking...

also really good with 2 cans of Dr. Pepper and a quartered onion added before cooking, slow cooked for many hours, fat removed, then shredded.

makes great bbq sandwiches with slaw

Add extra cumin and onions, or gets some "menudo spice mix". Boil and shred some chicken. Add to cubed or shredded pork and add hominy to taste. You got "pozole" great on cold days or for a hangover!

OK, so I settled on a beef stew with a twist. now I find it's going to be 70F here on monday... oh, well.
