Is my unlimited data plan with AT&T associated with the phone, or the plan, or is it going to go away if I do any kind of tinkering with either the device or the plan?
In short, if I change ANYthing do I lose the unlimited data? It's not like I even need it, it's just something I like having for no good reason at all, so I'm curious as to what will make me lose it.

It should stay grandfathered in, as long as your bill is paid on time.
That being said---they are known to throttle users that go over 3GB per month, so you could just get the 3GB plan and have hot spot as an option.

Somewhat correct. The plan stays grandfathered in and the data is still unlimited. I had an unlimited data plan with my iphone 3GS and it was carried over to my iphone 4S. The difference is that AT&T may slow down the data after a certain amount of usage. So, it'll still be unlimited, just slower unlimited. Annoying.

Well, since I don't even use a gb a month, I don't think that's a problem. It's really more of a psychological thing: oh wow my data is unlimited. Stupidity on my part, surely, but there it is.

That's a good point about the amount of data used probably increasing. Now I have a good reason besides unadulterated greed. :-)

I had had the $20 unltd plan w/ ATT and my original iPhone and then last Nov I got the 4S but decided to move to Verizon and gave my orig iPhone to my daughter. She wanted to keep her phone number and so we tried to switch my ATT phone # to a basic flip phone and move her number to the iPhone. They were not happy at the ATT store w/ one guy saying that ATT was not going to support that phone anymore. Phone support was much nicer and we almost had the switch done but in the end, I lost the unltd plan. It was too much of a hassle to try to fight them. So, in retrospect, I think I would have had her use the old number and ask her friends to update their listings.

i have the unlimited plan grandfathered to a iphone 4S
once in a blue moon i over over the 3gb soft limit to get throttled.
in practice, i didnt notice a big slow down.
try to keep it as long as you can
