rax... I think I've figured out the controls, but I do agree that the amount of suckage has increased 100%.
1- play a specific album/playlist/song - I just go to 'my music' and search. Or you can change the display from Artists to Albums to Songs, etc...
2- turn on/off shuffle - It's a control at the bottom of the 'Now playing' screen.
3- be compatible with my Sony head unit.. yeah, you're on your own with that one. Apple's "Car Play" stuff seems to have made it only compatible with crazy pricey cars. Admittedly my son's 2014 Ford "Sync" system handles it as an 'Ipod' when it's plugged into the USB port , and works pretty decently with it.

The only problem I've had with Ecoute is with the tile layout. It limits the length of the playlist name that can be displayed. Other than that it is great.

I've been using Ecoute. The Music app has been exiled to the last pane of apps on my phone.

My only real grip with the 9.1 music app is the teeny tiny "window" with Play button that you have to hit to get the larger Play window.
But I use my Watch or Siri if it's inconvenient or unsafe to expand that window.
I do miss buttons, but you can make the 9.1 equivalent more "accessible" in Settings.
At the moment, iT 12.2 is downloading because my Air 2 demands it.
